One of our favorite places to be is in the kitchen. We love to bake and cook and it all stemmed from our mom's passion of cooking. She would find a recipe that she loved, and then make it all year long. We used to say, "That was the year of the cheesecakes" or "That was the year of cinnamon rolls." Some of our fondest memories revolve around cooking together in the kitchen. We love to get together as family and contribute our best recipes for the meal. And we are constantly calling each other saying, "You've got to try this recipe!" We'd like to share our favorite recipes with you. So, happy cooking, happy baking, happy eating, and then happy exercising afterwards to burn those calories!

Chocolate Peanut Butter Bites


I just love when desserts are bite-sized. And I love when they have chocolate in them. And I LOVE when that chocolate is paired up with peanut butter! It was a Sunday and I wanted to try to make something new with some leftover Halloween miniature Reese Peanut Butter cups. I had a box of Devil's Food Cake mix and decided I'd combine a couple of recipes and these were a hit at our house! I can't wait to make these again because they were gone too quickly!

Chocolate Peanut Butter Bites

INGREDIENTS:

- 1 box Devil's Food cake mix

- 1/4 cup + 1/8 cup oil

- 2 eggs

- miniature Reeses Peanut Butter cups


DIRECTIONS:
In a large mixing bowl, mix the cake mix, oil and eggs together. Spray a mini muffin pan with PAM. (I use the Pampered Chef Deluxe Mini Muffin Pan). Using a small cookie scooper (I use the Pampered Chef Small Scoop), put a small scoop of batter into the muffin tins. If you've got a tart shaper, then press down in the center of each ball (I use the Pampered Chef tart shaper), but if you don't have it, then just press down in the center with your thumb.

Bake at 350 degrees for 8 minutes. While they are baking, unwrap the Reeses Peanut Butter cups. As soon as they come out of the oven, push a peanut butter cup all the way down so that the top of the peanut butter cup is even with the top of the cookie bite. Let sit in the pan for 10 minutes, and then using a knife, remove the cookie bite from the pan. Continue to let cool, and serve once the peanut butter cup has hardened again.

*You can use the same concept of this recipe, only instead of making a Devil's Food Cake batter, you can use your favorite peanut butter cookie dough or chocolate chip cookie dough.
