One of our favorite places to be is in the kitchen. We love to bake and cook and it all stemmed from our mom's passion of cooking. She would find a recipe that she loved, and then make it all year long. We used to say, "That was the year of the cheesecakes" or "That was the year of cinnamon rolls." Some of our fondest memories revolve around cooking together in the kitchen. We love to get together as family and contribute our best recipes for the meal. And we are constantly calling each other saying, "You've got to try this recipe!" We'd like to share our favorite recipes with you. So, happy cooking, happy baking, happy eating, and then happy exercising afterwards to burn those calories!

Chocolate Mint Brownies


Ahhh. One of my favorite combinations - chocolate and mint. This recipe came from my friend Kristie Stephens and it is just so yummy. I always find myself making these around Christmas time. The recipe below is for a 9x13 pan of brownies. Just cut it in half if you are making an 8x8 pan. So yummy!!!

Chocolate Mint Brownies

FROSTING INGREDIENTS:

- 1 pan of your favorite brownie recipe, baked and cooled

- 10 Tbsp. melted butter

- 5 Tbsp. heavy cream

- 5 cups powdered sugar

- 1/2 tsp. mint flavor extract (can use either mint or peppermint)

- green food coloring


CHOCOLATE TOPPING INGREDIENTS:

- 12 oz. package semi-sweet chocolate chips (2 cups)

- 1 cube butter, melted


DIRECTIONS:

Mix the frosting ingredients together (melted butter, whipping cream, powder sugar, mint extract and green food coloring) and spread on top of brownies.

In a microwaveable bowl, melt the chocolate chips and butter together for a minute and stir. If additional time is needed to melt the chocolate, then do it at 30 second increments and stir in between. Pour on top of mint frosting and spread.

Let the melted chocolate topping completely cool and re-harden before cutting and serving.
