Pudding Chocolate Chip Cookies


When it was my youngest daughter Claire's birthday, her Primary teacher at church (my friend Melinda Hopkins) had made her a baggie with these cookies in it. Claire was sweet enough to share one of the cookies with my oldest daughter Caitlynn. When Caitlynn took a bite she said, "Mom, you HAVE to get this recipe!" I said, "Let me try." Sure enough, I LOVED the way these cookies melted in my mouth. I immediately contacted Claire's teacher and asked for the recipe. We make them every Friday now and just love them!

Pudding Chocolate Chip Cookies

INGREDIENTS:

- 1 cup butter, softened

- 1/4 cup sugar

- 3/4 cup brown sugar

- 3.4 ounce box of vanilla instant pudding

- 1 tsp. baking soda

- 1 tsp. vanilla

- 2 eggs

- 2 1/2 cups flour

- 2 cups chocolate chips

DIRECTIONS: Beat together butter, sugar, brown sugar, pudding mix, baking soda and vanilla. Beat in eggs. Add flour and stir together. Stir in chocolate chips. Drop by heaping teaspoonfuls about 2 inches apart on an ungreased cookie sheet. Bake for 9 minutes at 375 degrees. (Normally I bake my cookies for 10 minutes...but with these ones, we really like them a little underdone and chewy, so we really just stick with 9 minutes).
