One year at Christmas my friend Becky gave our family this Chex snack mix with a cute tag that said something like "Santa makes a list and Chex it twice to see if you've been naughty or nice"...or something like that. I can't remember exactly, but what I do remember is how amazing this recipe is! It's an awesome recipe to make for family functions, or when your kids have friends over, or just whenever. It makes a large amount and is quite addicting. Thank you Becky for filling our stomachs with love and our arteries with corn syrup and yumminess!
Becky's Chex Snack Mix
INGREDIENTS:
- 14 oz. box of corn Chex cereal
- 12 oz. box of Honey Grahams
- 3 cups shredded sweetened coconut flakes
- 1 cup slivered or sliced almonds
- 1 cup cashews
- 2 cups sugar
- 2 cups light corn syrup
- 2 cubes butter
- miniature marshmallows (no measured amount...just whatever looks good to you)
DIRECTIONS: In a LARGE mixing bowl (we're talking abnormally large...I don't have a mixing bowl as large as I need, but I do have a huge tupperware container with a lid that works nice) combine the cereals, coconut, and nuts. Set aside. In a pot, combine the sugar, corn syrup, and butter. Bring to a boil on the stove, and then stir while it boils for 3 more minutes. Pour this hot mixture onto the cereal mixture and stir. Before it gets starts to cool down, add some marshmallows and continue to stir. Lay out lightly on 3 cookie sheets or on sheets of waxed paper to cool. Once it has cooled completely, store in airtight container. (One time I went straight from stirring the mixture to the airtight container, and the cereal got soggy...so do not omit the step of letting it cool on the pans). ENJOY!
