Crepes

Crepes. I love them. I can't get enough of them. They are like pancakes made for angels. I just love how light and fluffy they are, and that I never feel stuffed when I eat them! This recipe is one of my favorites. It's fun having all sorts of fillings and letting the kids "build their own." Ahhh. Crepes.

Crepes

INGREDIENTS:

- 2 eggs

- 1 cup milk

- 2/3 cup all-purpose flour

- 1 pinch of salt

- 1 1/2 tsp. oil

DIRECTIONS:
In a blender, combine the eggs, milk, flour, salt and oil. Process until smooth. Cover and refrigerate 1 hour. Heat a skillet over medium-high heat and spray with Pam. Pour 1/4 cup of crepe batter into the pan, tilting to completely coat the surface of the pan. Cook 1-2 minutes, turning once, until golden. Repeat with remaining batter. Filling ideas: whip cream, berries, pudding, syrup, chocolate sauce, etc.
